Veal from Navarra is mainly distinguishable by:

Its low level of fat. The layer of fat is very thin and the muscles of the animal can be seen through it in almost all the tract. The ribs seem to have no fat and the internal side of the thoracic cavity – the intercostals muscles – look perfect.

The colour of the meatH. This varies and can be pink, light red and red.
