Lamb from Navarra

The I.G.P. Lamb from Navarra distinguishes two types of animals:

Suckling lamb. Mild and succulent meat, colour pale rose or white, tender with a mild taste.

Ternasco lamb. Very nutritive meat, colour rose, flavour more pronounced than the suckling lamb due to its greater size and age.
